Fresh Strawberry Mousse
The perfect light and fruity summer dessert to enjoy outside on a warm evening. This recipe is super simple to let the sweet flavour of fresh strawberries shine. Make in advance for a no fuss but impressive dessert that’s ideal for entertaining.
Fresh Strawberry Mousse

Ingredients:
1 ½ tsp gelatine
3 tbsp water
1 punnet (250g) strawberries
⅓ cup caster sugar
1 ¼ cup cream
optional garnishes: mint leaves, freeze dried strawberries
Method:
To bloom the gelatine, place the water in a small bowl and sprinkle the gelatine evenly over top. Leave for 5 minutes to swell in the water.
Hull and halve the strawberries, reserving two small strawberries for garnish. Blend the strawberries, sugar and gelatine mixture to a smooth puree in a food processor.
Whip the cream until it forms soft peaks. Gently fold the strawberry puree through the whipped cream.
Spoon into four glasses, jars or ramekins. Cut the reserved strawberries in half and place on top to garnish.
Chill in the fridge for at least an hour or overnight. Add optional mint leaves and crumbled freeze dried strawberries before serving.
NOTES:
If you don’t want to use gelatine, simply skip the water and gelatine which will result in more of a whipped cream texture.
