Baked Feta dip
The best food for entertaining is a tasty dish that looks impressive but requires minimal effort and/or can be prepared in advance. This is one of those dishes! Easy to prepare and will have your guests raving about it. Perfect for nibbles over the festive season and goes great with a glass of wine!
Don’t just take it from me. I tested it out in preparation for our family Christmas and my Dad said it was the best cheesy dippy thing he had probably ever had!
You can also assemble the dish the day before, cover and pop it in the fridge. When you need it, simply pop it in the oven and you’re good to go. Less time in the kitchen and more time with your loved ones is what it’s all about.
Baked Feta Dip
SERVES: 6-10

Ingredients:
1 block of feta
12 cherry tomatoes, halved
12 pitted olives, halved (black &/or green)
2 cloves garlic, finely sliced
1 lemon
olive oil
sea salt and cracked pepper
small handful of fresh basil
Method:
Preheat the oven to 200°C (400°F).
Place the block of feta in a small oven dish.
Sprinkle over the cherry tomatoes, olives and garlic.
Use a knife or zester to take a few strips of the zest off the lemon and add to the dish. Squeeze over the juice of the lemon.
Drizzle with a good glug of olive oil and season with sea salt and cracked pepper.
Pop in the oven to bake for 20 minutes or until soft.
Finish with some chopped basil leaves and serve warm with your favourite crackers or slices of bread.
TIPS:
To serve a bigger crowd, simply use a bigger dish and double the recipe.
